Italian Grape Ale is the perfect marriage of two great things - grape and beer, and Italian brewers are the masterminds behind this amazing beer style.

Wine and grapes have been such an intrinsic part of Italian culture that the appreciation of these gifts from god has become second nature for Italian brewers. To say Italy is a grand vineyard is not an exaggeration, it is a country with 545 wine grape varietals and a wine history dating back to more than 4000 years ago. With practically a vineyard in their backyards to play with everyday, Italian brewers have access to a vast knowledge of the many grape varieties and the nuances from different terroirs. Their mastery in creating such an amazing beer style has prompted the Beer Judge Certification Program to include Italian Grape Ale in their BJCP Style Guidelines as a brand-new category under Appendix B - Local Styles!

Ca' Del Brado is among the best Italian craft breweries to excel in this unique beer style. Take their IGA, Û 𝗯𝗮𝗰𝗰𝗮𝗯𝗶𝗮𝗻𝗰𝗮 as an example, it is spontaneously fermented with Grechetto Gentile - a kind of white grape from Gradizzolo, a biodynamic winemaker. It is a “skin contact” beer barrel-aged for 6 months with Brettanomyces Lambicus.

Many biodynamic winemakers believed all the great flavors come from grape skin. The process of macerating grape skin during fermentation not only adds flavors and tannins to the beer, the wild yeast from the grape skin further ferments the remaining sugar and makes the beer dry as a brut white wine! The unique vinegary acidity comes from Brettanomyces Lambicus, along with a hint of oaky, woody aroma from the barrel, Û 𝗯𝗮𝗰𝗰𝗮𝗯𝗶𝗮𝗻𝗰𝗮 combines the best of both worlds - the worlds of grape and beer!

【釀酒師的故事.𝐂𝐚’ 𝐃𝐞𝐥 𝐁𝐫𝐚𝐝𝐨創辦人(下集) - 將葡萄注入啤酒的靈魂】

意大利人嘅生活離不開葡萄酒——餐前、餐後、工餘、渡假,品酒才是正經事。意大利人釀啤酒,仲駛問嘅?梗係要將葡萄入酒啦!

要形容意大利係一個葡萄園之國,實不為過。意大利造酒有超過4000年歷史,至今擁有545個葡萄品種。意大利嘅造酒歷史令釀酒師有絕對嘅先天優勢。意大利有超過800間精釀酒廠,每一間酒廠可能總有一個葡萄庄園喺左近!釀酒師同葡萄庄園嘅關係密切,有過百個葡萄品種做試驗,釀酒師可以親身體驗不同品種嘅細微味道差別,更可以輕易試盡擁有不同風土條件嘅葡萄品種;難怪佢哋釀嘅意大利葡萄愛爾(Italian Grape Ale)釀得出色到啤酒評審認證都要喺2015年將佢加入啤酒風格指南(BJCP Style Guideline)嘅「本地風格」附錄!

釀出色IGA嘅酒廠,Ca' Del Brado絕對係其中嘅表表者。以佢哋嘅Û 𝗯𝗮𝗰𝗰𝗮𝗯𝗶𝗮𝗻𝗰𝗮為例,用上來自有機葡萄酒庄(biodynamic winemaker)Gradizzolo嘅Grechetto Gentile白葡萄連皮浸漬發酵,連同酒香酵母(Brettanomyces Lambicus)加入酒桶陳釀6個月。

呢隻IGA點解唔止係普通Wild Ale咁簡單?答案源自「葡萄連皮浸漬發酵」呢個步驟!唔少有機葡萄釀酒師都相信葡萄酒嘅味道主要來自葡萄皮,葡萄皮除咗令啤酒加添葡萄果味同單寧(tannin)之外,葡萄皮上嘅酵母進一步將剩餘糖份轉化為酒精,令啤酒更加乾爽,感覺就好似飲緊一杯白酒!當然,佢亦都唔止係一杯白酒咁簡單,酒桶陳釀令啤酒散發獨有嘅橡木味,連帶酒香酵母獨特嘅醋酸、果酸味,令Û 𝗯𝗮𝗰𝗰𝗮𝗯𝗶𝗮𝗻𝗰𝗮成為一隻完美嘅葡萄、啤酒結晶品——邊個話魚與熊掌,不可兼得?
