"Time is the one thing we will never compromise. You cannot achieve excellence if you cut it in your process.” The sloth holding an hourglass in Ca' Del Brado’s logo ⏳🦥 tells us what the brewery stands for - the only way you can brew great beers is to become a sloth - a wild animal with a great deal of patience that is always taking it slow.
Mario Di Bacco, Luca Sartorelli, Andrea Marzocchi and Matteo D’Ulisse started Ca' Del Brado in 2016. The four homebrewers from Bologna love experimenting with wild fermentation and fruits, “Some of the beers we make now come from those homebrewing days!”
Aside from their logo, the name “Ca' Del Brado” defines their philosophy as well - Ca’ is short for “Casa” which means “house”. “Brado” means “wild” in Italian, the word is also rooted from the Greek word “bradùs”, which means “slow”. The name “House of Wild and Slow” best describes their cellar - the magical place where wild yeasts and bacteria slowly turn beer wort into Italian Wild Ales with a unique and unmistakable character.
The unique and unmistakable character of Ca' Del Brado’s beers is summarised into three descriptors - balanced, easy to drink and elegant - “as in the best Italian tradition!” Co-Founder Luca added, “The local beer scene in Bologna is very lively, as the city has a rich culture of gastronomy. We have a good number of breweries making all kinds of beer styles.” For Luca, the drinkability of a beer is his priority, “In beers I love drinkability - the feeling that makes you thirst for another beer. This is the first thing we seek when we make our beers.”
Luca’s recent favorite brew is Zena - a barrel aged wild Gose. Gose (pronounced “GOES-uh”) is one of the oldest German beer styles. It’s a sour wheat ale with unique herbal and salty characters usually from the addition of coriander and sea salt. Zena is barrel aged for around 8 months with lactobacillus and brettanomyces, and spiced with coriander and Cervia salt, “We used this special sweet salt from the Adriatic Sea, which gave a very mellow mineral note to the beer.”
After sipping the beer, you would understand why it is Luca’s favorite - the funky and herbal notes of barnyard, coriander and pepper are rich on the nose but soft and balanced on the palate. The sweet Cervia salt gives a pleasant mineral character and brings out the zesty, refreshing tartness in the beer. It’s easy drinking, balanced and elegant, and we bet you can’t wait to have another sip of the beer!
In this fast-moving world, it’s not easy to insist on taking the time and patience to brew a beer, yet the brewers at Ca' Del Brado think it’s all worth it. “I love when I see people enjoying our beers. They may not know the effort, the hard work and the time spent brewing the beer, but at that moment they are happy with what they are drinking. And this is the most satisfying moment for a brewer and gives you the motivation to go forward.”

Ca' Del Brado嘅酒廠標誌係一隻拎住沙漏嘅樹懶⏳🦥——出咗名行動緩慢嘅樹懶,拎住個象徵時間嘅沙漏話比你知:慢慢來、花點耐性,要釀好酒只有「時間」不能妥協!
來自意大利博洛尼亞、由自釀起家嘅Mario Di Bacco、Luca Sartorelli、Andrea Marzocchi同Matteo D’Ulisse,喺2016年創辦Ca' Del Brado。除咗佢哋嘅樹懶標誌,酒廠嘅名字同樣反映咗佢哋嘅釀酒態度同對野生發酵啤酒嘅熱愛——「Ca’」(Casa)係意大利文「家」嘅意思,「Brado」源自希臘文「Bradùs」,有「緩慢」嘅意思,而意大利文嘅「Brado」就有「野生」、「荒野」嘅意思。「Ca' Del Brado」就係「慢」「野」之家——佢哋嘅酒廠、酒窖係野生酵母嘅家,而啤酒就喺呢個神奇之家慢慢釀成!
喺「慢野之家」釀出嚟嘅啤酒,洋溢住意大利獨有嘅風味:「意大利歷史悠久嘅飲食文化鼓勵咗好多酒廠釀造唔同風格嘅啤酒,博洛尼亞尤其係一個充滿活力嘅城市。我哋嘅啤酒風格亦都同傳統意大利文化如出一徹——『優雅』、『平衡』、『平易近人』。啤酒嘅『易飲度』(drinkability)對我哋嚟講非常重要,我哋希望我哋嘅啤酒會令你想一杯飲完再一杯!」
創辦人之一嘅Luca話,最近令佢最想續杯嘅啤酒係Zena——酒桶陳釀德式海鹽小麥酸啤(Barrel Aged Wild Gose)。Gose(音:高sa)係德國最古老嘅啤酒風格之一,主要用小麥釀造,通常會加入海鹽同芫荽,令啤酒味道除咗酸之外仲有獨特嘅鹹香。Zena以乳酸(lactobacillus)、酒香酵母(brettanomyces)發酵,喺酒桶陳釀咗8個月,再加入芫荽同海鹽:「我哋用咗亞得里亞海(Adriatic Sea)嘅切爾維亞鹽(Cervia Salt),佢係一隻鹹度較低、略帶微甜嘅海鹽,令啤酒帶輕微礦物風味。」
小編飲完Zena,完全體驗到佢哋所講嘅意大利風味——聞落微微芫荽、野菌香,飲落微酸微鹹、氣泡細密、味道細緻、平易近人,除咗優雅之外真係搵唔到第二個形容詞!
