In a sneaky study, 54 oenology (the study of wine tasting and wine making) students from the University of Bordeaux were asked to taste and describe one glass of red wine and one glass of white wine. What they didn’t know was that the “red” wine was just a white wine with red dye. The “expert” panel described the dyed white wine in a way that they would describe a red wine. Every single one, all 54, could not tell it was just a white wine with red dye.โฃ

The significance of this study is not to challenge the tasting experts’ competency, but to show how the effects of visual cues can override our senses of taste and smell! The brain processes olfactory (taste and smell) cues approximately ten times slower than sight, and this study further demonstrates that to us.โฃ

This is not to say we shouldn’t pay attention to visual cues at all while tasting beers. We should still take the visual cues into consideration, but be aware to not let it override our sense of taste. The color and haziness of the beer tell us information about the brewing ingredients and process, the label design and the brewery logos may reveal the style and reputation of the brewery, but we should be careful not to turn these impressions into biased expectations for the taste of the beer.โฃ
