What we taste can be affected by what we hear. The most prominent example might be the “terrible” airplane food. ✈ 🍱⁣

We all remember how bland and unappetising airplane food is, and we often associate it with the dry and recycled air in the cabin. Yet, Oxford University’s Crossmodal Research Laboratory’s study for British Airways, shows that passengers’ dislike of airplane food stems from the loud low-frequency roar of the engines, which temporarily dampens the passengers’ senses towards sweetness and accentuates perceived bitterness. The sonic environment actually changes the flavors! ⁣

Now let’s do a test to see how sound can change the sweetness and bitterness in beer. Find two different songs with different pitches - one with a higher pitch, another with a lower pitch. Take a sip of beer while listening to the two different songs and see how the flavor of the beer changes when you switch between songs. In theory, you should be able to notice sweet flavors more while listening to higher-pitched sounds, and bitter flavors more while listening to lower-pitched ones.⁣

我哋對味道嘅敏銳度,原來好受聲音影響,其中一個最明顯嘅例子,可能係「難食的飛機餐」!✈ 🍱⁣

我哋成日投訴話飛機餐唔好食,其實唔係因為飛機上面空氣唔流通、濕度低,原來係因為飛機引擎太嘈!牛津大學研究發現,飛機引擎嘅低頻率噪音,會令人對甜味嘅感覺變得遲鈍,相反,對苦味嘅敏銳度會上升。兩者加埋,就算係食龍肉都冇味啦!⁣

唔信?不如做吓呢個實驗啦!搵兩首音高(pitch)不同嘅歌——一首以高音(high-pitch)為重點,另一首以低音(low-pitch)為重點,聽嘅時候同時飲同一杯啤酒。理論上,聽緊以高音為主嘅音樂,杯啤酒飲起嚟會甜啲;而聽緊以低音為主嘅音樂,杯啤酒就會變得苦啲啦!⁣
